Delicious Swedish Potato Sausage (Värmlandskorv ) made with ground pork, ground beef, diced potatoes, milk, and a few basic spices. Just like grandma makes them!

Värmlandskorv (also called Potatiskorv) is a Swedish potato sausage made by combining ground pork, ground beef, potatoes, onions, and a few basic seasonings. This traditional sausage is typically often served to celebrate different holidays, like Christmas!

To cook Swedish Potato Sausage, you can fry it, bake it, boil it, or even grill it! It's a versatile food that tastes great in a lot of different dishes – Swedish or not!

Swedish Potato Sausage can be referred to as Potato Ring, Swedish-Style Potato Sausage, Värmlandskorv, and Potatiskorv. What it's called depends on where you are and your tradition.

Can I Make Potato Sausages Ahead of Time?

Yes! Just follow the instructions until you've boiled all the potato sausages, then freeze in a freezer-safe bag.

When ready to eat, just defrost and reheat as usual.

What You Need to Make Potato Sausage

For the Filling

  • 3 lbs ground pork
  • 2 lbs ground beef
  • 5 lbs potatoes, finely diced
  • 5 onions, finely diced
  • 4 tablespoon salt
  • 3 teaspoons allspice
  • 2 teaspoons pepper
  • 1/2 cup milk

For Stuffing

  • sausage or hot dog casings

How to Make Potato Sausage

Prepare the Sausage Casings

  1. In a large bowl, soak the sausage casings in water for 4-6 minutes. Rinse with cold water, then set aside.

Make the Potato Sausage Filling

  1. In a large bowl, mix all the filling ingredients until well combined. Feel free to also grind the potatoes and onions along with the meat beforehand (using a grinder or grinder attachment) for a more uniform texture.

Stuff the Sausage Casings

  1. Stuff the potato sausage filling into the prepared casings using a sausage stuffer. Don't overfill the casings to prevant breakage. Once stuffed, tie the ends of the casings and make sausage links by twisting the casing where you want the links to end.
  2. Prick the top of each sausage with a toothpick.

Cook the Potato Sausages

  1. In a large pot, boil water (just enough to cover the sausages).
  2. Once the water comes to a rolling boil, turn the heat down to a low simmer. Place the potato sausages in a single layer and boil for about 14-17 minutes, or until the sausage is cooked through.
  3. Optionally, you can sear the sausages in a large skillet for golden-brown potato sausages. Add butter to a skillet on medium-high heat, and cook the sausages for 2-3 minutes per side, or until they are golden brown. ENJOY!
